BBQ Chicken & Veggie Pizza

Ingredients
2 cups shredded Gold'n Plump Bake-It-Easy™ Sweet BBQ Whole Chicken or
Deli Fresh Rotisserie Chicken -- SWEET BBQ
1 small zucchini, cut in half lengthwise & then into 1/4-inch slices
1/2 small red onion, cut into 1/4-inch slices
1 (12-inch) pre-baked pizza crust
1/2 cup bottled barbecue sauce
1 cup (4 ounces) shredded Monterey Jack cheese
Prep Time: 10 minutes
Cook Time: 15 minutes
Yield: 4 servings
Directions
1. Cook Bake-It-Easy Chicken according to directions, let cool, shred. (If using Deli Rotisserie Chicken, you may skip this step.) Preheat oven to 450°F.
2. Heat oil in a large skillet over medium high heat. Add zucchini, bell pepper, and onion; cook, stirring frequently, for 5 minutes or until the vegetables are just tender. Set aside.
3. Place pizza crust on a baking sheet. Stir together chicken and barbecue sauce in a medium bowl. Spoon chicken mixture evenly over pizza crust; top with vegetable mixture. Sprinkle with cheese.
4. Bake for 10 to 12 minutes or until the pizza is heated through and cheese is melted.

Ingredients
1 package (1 pound, 4 ounces)
All Natural™ Boneless Skinless Split Chicken Breasts
1/4 cup purchased basil pesto
1/2 cup whipped cream cheese
1 (10-inch) focaccia bread, plain or flavored
1 cup lightly packed stemmed fresh spinach
1/4 teaspoon salt
Prep Time: 15 minutes
Cook Time: 10 minutes
Yield: 6 servings
Directions
1. Place chicken on grill rack over glowing coals, or use a frying pan if using stove top. Grill for about 4 to 7 minutes. Turn chicken, baste with pesto, and continue to grill for about 4 to 7 minutes or until chicken is thoroughly cooked. Transfer chicken to a plate and cover to keep warm (if serving the sandwich warm). Or transfer chicken to a covered container and refrigerate for up to 2 days (if serving the sandwich cold).
2. Halve focaccia horizontally. Spread cut sides with cream cheese. Add a layer of spinach and tomato slices; sprinkle with salt. Add chicken breasts. Top with second focaccia half and press gently.
3. Use a serrated knife to cut the focaccia into 6 wedges.

Everyday Easy™ Chicken Patties have 50% less fat than regular ground beef. They are vacuum packed, flavor sealed, and there is no need to thaw - they are ready to cook! This recipe's tasty spread, made of bleu cheese, garlic, red onion, and red wine vinegar, are what make these chicken burgers far from ordinary.
Ingredients
FOR THE BLEU CHEESE SPREAD:
2 cups (8 ounces) crumbled bleu cheese
1/2 cup red finely chopped red onion
1/4 cup olive oil, preferably extra virgin
1/4 cup minced fresh flat-leaf parsley
2 tablespoons red wine vinegar
2 cloves garlic, minced
1/2 teaspoon pepper
TO COMPLETE THE RECIPE:
1/2 package (full package is 8 patties)
Everyday Easy™ Chicken Patties
4 bakery buns
Prep Time: 15 minutes
Cook Time: 15 minutes
Yield: 4 servings
Directions
1. Stir together all spread ingredients in medium bowl. Cover and refrigerate for at least 30 minutes or up to 24 hours to allow flavors to blend.
2. When ready to cook, prepare grill. Position grill rack about 6 inches above coals.
3. Place frozen chicken patties on grill rack over glowing coals. Cook for 7 to 8 minutes on each side or until lightly browned and thoroughly cooked.
4. Toast buns. To assemble each sandwich, spread about 1 1/2 tablespoons of cheese spread to both cut sides of each bun. Layer bottom half with chicken patty and second half of bun.
