TOMATO BASIL BLT SALAD
Here’s a super-quick supper that offers summer flexibility. Either grill or sauté the Gold’n Plump® Seasoned Boneless Skinless Breast Fillets on the stovetop, then quickly assemble ripe tomatoes, crisp smoky bacon, and tender garden greens. Drizzle with a creamy dressing spiked with lemon and garlic—and sprinkle with chopped red onion if you’d like.Makes 2 servings
IngredientsDRESSING
¼ cup light mayonnaise
2 tablespoons lemon juice
1 small clove garlic, finely chopped
Freshly ground pepper to taste
SALAD
2 (6 ounces each) Gold’n Plump® Seasoned Boneless Skinless Breast Fillets—Tomato Basil Flavored
3 thick-cut slices bacon, cut into ½-inch pieces
1/2 cup cubed (3/4-inch) whole-wheat country bread
4 cups mixed baby salad greens, including some fresh basil leaves if desired
1 cup red and/or yellow cherry tomatoes, halved
Directions
1. Mix all dressing ingredients together until smooth; set aside.
2. Meanwhile, grill or sauté chicken breasts in large skillet over medium-high heat for about 10 minutes, turning once, until no longer pink in center. Place on plate; hold until ready to assemble salads.
3. Cook bacon in large skillet for 5 to 6 minutes or until crisp. Remove from skillet; drain on paper towels. Drain all but 1 tablespoon fat from pan.
4. Add bread cubes to skillet; cook and stir over medium heat for about 5 minutes or until golden.
5. Place greens on two plates; top with tomatoes and bacon pieces. Slice chicken fillets and place on top. Drizzle with dressing and sprinkle croutons on top.

Ingredients
2 cups shredded Gold'n Plump Bake-It-Easy™ Sweet BBQ Whole Chicken or Deli Fresh Rotisserie Chicken -- SWEET BBQ
1 small zucchini, cut in half lengthwise & then into 1/4-inch slices
1/2 small red onion, cut into 1/4-inch slices
1 (12-inch) pre-baked pizza crust
1/2 cup bottled barbecue sauce
1 cup (4 ounces) shredded Monterey Jack cheese
Prep Time: 10 minutes
Cook Time: 15 minutes
Yield: 4 servings
Directions
1. Cook Bake-It-Easy Chicken according to directions, let cool, shred. (If using Deli Rotisserie Chicken, you may skip this step.) Preheat oven to 450°F.
2. Heat oil in a large skillet over medium high heat. Add zucchini, bell pepper, and onion; cook, stirring frequently, for 5 minutes or until the vegetables are just tender. Set aside.
3. Place pizza crust on a baking sheet. Stir together chicken and barbecue sauce in a medium bowl. Spoon chicken mixture evenly over pizza crust; top with vegetable mixture. Sprinkle with cheese.
4. Bake for 10 to 12 minutes or until the pizza is heated through and cheese is melted.

Ingredients
1 package (1 pound, 4 ounces) All Natural™ Boneless Skinless Split Chicken Breasts
1/4 cup purchased basil pesto
1/2 cup whipped cream cheese
1 (10-inch) focaccia bread, plain or flavored
1 cup lightly packed stemmed fresh spinach
1/4 teaspoon salt
Prep Time: 15 minutes
Cook Time: 10 minutes
Yield: 6 servings
Directions
1. Place chicken on grill rack over glowing coals, or use a frying pan if using stove top. Grill for about 4 to 7 minutes. Turn chicken, baste with pesto, and continue to grill for about 4 to 7 minutes or until chicken is thoroughly cooked. Transfer chicken to a plate and cover to keep warm (if serving the sandwich warm). Or transfer chicken to a covered container and refrigerate for up to 2 days (if serving the sandwich cold).
2. Halve focaccia horizontally. Spread cut sides with cream cheese. Add a layer of spinach and tomato slices; sprinkle with salt. Add chicken breasts. Top with second focaccia half and press gently.
3. Use a serrated knife to cut the focaccia into 6 wedges.

Bleu-Topped Chicken Burgers

FOR THE BLEU CHEESE SPREAD:
2 cups (8 ounces) crumbled bleu cheese
1/2 cup red finely chopped red onion
1/4 cup olive oil, preferably extra virgin

2 tablespoons red wine vinegar
2 cloves garlic, minced
1/2 teaspoon pepper
TO COMPLETE THE RECIPE:
1/2 package (full package is 8 patties) Everyday Easy™ Chicken Patties
4 bakery buns
Prep Time: 15 minutes
Cook Time: 15 minutes
Yield: 4 servings
Directions
1. Stir together all spread ingredients in medium bowl. Cover and refrigerate for at least 30 minutes or up to 24 hours to allow flavors to blend.
2. When ready to cook, prepare grill. Position grill rack about 6 inches above coals.
3. Place frozen chicken patties on grill rack over glowing coals. Cook for 7 to 8 minutes on each side or until lightly browned and thoroughly cooked.
4. Toast buns. To assemble each sandwich, spread about 1 1/2 tablespoons of cheese spread to both cut sides of each bun. Layer bottom half with chicken patty and second half of bun.
